Grilled Mussels in Beer and Garlic

Prep time 10 minutes
Cook time about 10 minutes

2 lbs mussels, scrubbed, beards removed
4 cloves garlic, minced
1 tsp kosher salt
1/4 teas crushed red pepper flates
3 tbsp finally chopped fresh parsley
1 12 oz bottle light beer or 1 1/2 cups vegetable broth + 1 tsp hot sauce

Preheat grill to medium (300-350 degrees F). Divide mussels among 4 large sheets of heavy-duty foil. Pull the ends of the foil up; crimp the edges and sides to enclose the juices. In a bowl stir together the beer or broth, hot sauce, garlic, salt and red pepper flakes. Pour sauce over mussels. Place foil pouches with mussels on grill, and cook covered for 5 to 6 minutes until mussels begin to open and turn opaque. Transfer grilled mussels and juices to a serving platter or bowl. Discard any mussels that did not open. Sprinkle parsley over mussels and serve. Serves 4.

Healthy Skillet Green Beans

Green beans are healthy and inexpensive, which helps when you’re on a budget. Great for a holiday meal or when you have company.

Prep time: About 12 minutes
Cook Time: About 10 minutes


1/4 cup slivered almonds
5 cups fresh green beans – cut into 1 inch pieces
3 tbsp. butter
1 shallot or 1/2 small onion, thinly sliced
3 garlic cloves, minced
2 cups cherry tomatoes – halved
1 tsp. dried basil

Place almonds in large skillet, cook over medium heat until light golden, stirring occasionally. Remove from pan and set aside. Place green beans and 1/2 cup water in same skillet. Heat until steaming. Cover and simmer 8 minutes or until tender-crisp; a little longer if you want more tender. Drain beans, set aside and keep warm. Wipe skillet dry. Return skillet to low medium heat. Melt butter in pan. Add shallot/onion and garlic and cook 30 seconds. Add tomatoes and basil. Cook until heated through. Add beans and almonds. Toss to coat and heat through. Serve. Salt and pepper to taste. Serves 6.

Healthy Strawberry-Limeade Party Punch

Great for Labor Day or on any day! Great for your picnic or party!

1 16 oz pkg fresh strawberries – remove stems
1 12 oz can frozen limeade concentrate, undiluted
5 cups cold water
Fresh Mint Springs

Place fresh strawberries in a food processor or blender to puree, lightly pulse until smooth. Pour through a strainer into a bowl. In a large pitcher, combine limeade and water, stir until limeade dissolves. Stir in pureed strawberries. Add a splash of your favorite blend of Acai Juice if you wish. Pour over ice and top with frest mint sprigs and serve. Serves 8.
